The wording of your question suggests you think you will mix your own air dry from some clay, but this is not the way it is normally done - the clay commonly consists of earth clay mixed with a binder that results in the clay drying stronger than just earth clay and without the dust plain clay produces.
The commercial clays sold have various characteristics which I am sure the other answers include.

Im not sure about the best because that is a relative term. But Hobby Loddy carries three kinds of it in most stores. When I need something that dries quick I use the Crayola white air dry clay

Some of your choice for a particular sculpted item would depend though on exactly what you're making, and the characteristics you want for that sculpt and for your experience. For a really refined, high-detail air-dry clay, you could try La Doll, Premier, for example, but many "sculpts" can be made with other air-dry clays too.

I suggest that you use Amaco Stonex and or Marblex. I am a sculptor; they handle and look great. You can get them at Michael's, A.C. Moore, or any other art store (including online). They dry over a few weeks, but they look great and they are pretty strong. You can also paint over them if you don't like their color.
